Waffles with rhubarb

INGREDIENTS

  • 1 bunch rhubarb, trimmed and chopped
  • 1/4 cup caster sugar
  • Zest and juice of 1 orange
  • good pinch ground ginger
  • 4 waffles
  • 4 scoops vanilla ice-cream

METHOD

Step 1

Place rhubarb, caster sugar, orange rind, 2 tablespoons juice, and ginger into a saucepan over medium-high heat. Bring to the boil. Reduce heat to low and simmer, partially covered, for 5 minutes.

Step 2

Meanwhile, toast the waffles and place onto serving plates. Top each waffle with rhubarb mixture, and serve with a scoop of ice-cream.
